Olivares is a project dedicated to the subtleties of oleiculture that elaborates limited editions of extra virgin olive oil. They define themselves as producers, collaborators, and also as an olive-oil consultancy that enjoys assembling knowledge to keep the tradition of olivegrowing alive. Because traditions, just like olive trees, are formed over time and are preserved by the people.
